Dan Dan Chilli Sauce Stir-Fry

 

Ingredients (serves 2)

150-200g beef (fillet/sirloin) or Pork (fillet) cut into strips 

FOR THE MARINADE

1 Tbsp Dark Soy sauce

1 tsp Granulated sugar

2 tsp Corn flour

1/2 tsp Rice wine (optional)

Pinch of Salt & Pepper

FOR THE VEGETABLES

2 Tbsp Sesame oil/Vegetable oil

50g Onions roughly chopped 

50g Carrots sliced 

1/2 Red bell pepper sliced

50g Green vegetables. Broccoli/peas/purple sprouting

50g Mushrooms sliced

2 Tbsp Dan Dan chilli sauce from Mei's Homemade

50ml water

Roasted cashew nuts scattered on top (Optional)

TO SERVE

Pre cooked rice or noodles cooked to the packet instructions.

Instructions

In a large bowl, mix the soy sauce, sugar, corn flour, rice wine (if using), salt & pepper. Add the strips of beef coating well on both sides. Leave to marinate for at least 20 minutes.

Add 1 Tbsp oil to a non-stick pan over a medium to high heat and stir-fry the onions and carrots for 2 minutes . Add the rest of the vegetables and stir-fry for 5 minutes. Remove from the pan into a bowl leaving as much oil behind in the pan as possible.

Put the pan back on the heat, add the remaining oil and the meat strips along with all the marinade juice from the bowl and stir-fry the meat on both sides until cooked. This should take about 5 minutes. Try not to over cook as this will make the meat tough to chew.

Mix in the Dan Dan Chilli sauce. Add the water and then add the veg back to the pan and stir-fry for 3 minutes or until the vegetables are heated through and you are ready to serve.
