Ingredients
250g fresh asparagus
6 Tbsp Extra virgin olive oil
3 cloves of black garlic
1 garlic clove
1/4 tsp chilli flakes
1/2 tsp salt
25g freshly grated Parmesan cheese
60g pine nuts
1 tablespoon lemon juice
Instructions
Preheat the oven to 200º/180º Fan
Cut off and discard any tough ends of asparagus. In a large baking dish, add 1 Tbsp of oil, the asparagus, black garlic & garlic clove and the chilli flakes. Mix well and when the oven's up to temperature, pop the dish in for 15 minutes.
Allow the asparagus to cool down a little then blitz in a food processor with the rest of the ingredients for 1 minute. Scrape down the sides of the bowl & blitz again until smooth. Serve with cooked pasta..
