A traditional Lebanese chicken marinade and a real favourite in our household. Packed with flavour and perfect for creating dinner on the BBQ or indoors.
Ingredients: sumac, cumin, sweet paprika, ginger, garlic, sea salt, cardamom, pepper, coriander leaf, turmeric, coriander seed, cinnamon, allspices, cloves, chilli.
How to use
Mix together 30g Shawarma spice, 1 tsp of lemon juice & 5 Tbsp of oil to form a paste. Rub the paste in & coat 500g of boneless chicken thighs or breast (I prefer thighs). Marinate for at least 4 hours or overnight for best results. Cook on a high heat in a pan, grill or on the BBQ. Turn often to make sure it doesn't burn. Check that the chicken is cooked & serve with wraps, chips or on it's own as a great starter.
