Chorizo & mushroom macaroni in a black garlic butter sauce

Serves 2
1 Tbsp Extra virgin olive oil
50g Chorizo cut into small pieces
100g Onions cut into small pieces
2 Garlic cloves crushed
1/4 tsp chilli flakes (1/2 tsp if you want a kick)
50g Salted butter
100g Mushrooms washed, drained and cut in small chunks
40g Black olives sliced
2 Black garlic cloves chopped
2 Tbsp Bread crumbs
75g Soft cheese
25g Parmesan cheese grated
175g Macaroni
20g Fresh basil chopped
Cook the macaroni to the packet instructions and set aside.
In a medium frying pan, over a medium heat, add the oil. When the oil is hot add the chorizo & onions and gentle fry for 5 minutes or until the onions are soft and the juices from the chorizo escape into the oil. Add the crushed garlic & chilli flakes and fry for 3 minutes. Add the butter and let it melt into the pan & mix well. Add the mushrooms and stir into the juices. Mix in the olives & black garlic. Stir in the bread crumbs until completely saturated with the butter sauce. Add the soft cheese and parmesan & mix in. Fold in the cooked pasta and the chopped basil. Season with salt & pepper to taste and you are ready to serve.
